Can you please be more specific?
I went to time signatures, time signature properties, and then beam groups.
But, I didn't see any options to limit the length of beams connecting notes to no longer than one beat.

You need to use the break beam tool to break the default beams into single beat groups. I don't know what tine signature you are using but for the example in the handbook this is what you need to do
You can do the same thing for individual groups of notes in the score using the break beam tool in the Beam properties palette, but you need to do it in the reverse order 1. click on the note, 2, click on the break beam tool.

The time signature is 4/4.
Must I break each beam separately and manually, or can I set it so it will always automatically break beams at the end of the beat?

See my first picture. That is in the time signature properties. That controls the default beaming for the stave that the time signature is applied to.
All as described (much better than I am doing here) in the handbook!
