Click a note, press "X". Or select a bunch of notes and flip them all at once.
BTW, without knowing more about why you are asking, I would also suggest you chceck out Voices in the Handbook.
I have a crotchet triplet G, A, B in treble clef, and the B has a downward stem. I want it t be upward. I have tried selecting the note, and pressing X but nothing happens - I am on MacOS 10.12.5 running MuseScore 2.1. Advice would be most welcome. Many thanks.
(PS I am a new user of MuseScore - I've been used to Sibelius, but approaching retirement I want to use MuseScore - primarily as a cost saving).

Pressing x should flip the stem. If that doesn't work, select the not and look at the stem direction in the inspector.
