I'm experimenting a little with imported MIDI files. How can I change what instrument plays a staff? (is that the word?)

Do you mean changing what instrument plays FOR a particular staff? If that's the case, then right click one of the measures of the staff, and in the list that appears, click "staff properties." Then you can probably spot the "change instrument" option under the "part properties." Choose whatever instrument you desire. Hope this helps!
