Pedal up symbol
I've cast around in the Handbook and forums to find how to do this, and haven't got anywhere yet:
Rather than using lines after the Pedal symbol, I would like to use the traditional asterisk sign, representing Pedal Up. I've managed to get the sign to appear by right clicking on 'line properties', copying and pasting the 'Begin' text into 'End' and changing the 'Ped' text to 'Up'. I can also turn off the hook, but I cannot get rid of the line itself.
Could someone tell me how to do this please?

Click on the line;
Open the Inspector (F8);
Change Line Style (or make invisible).

(Or I could just turn the line white so it disappears altogether.)
In particular, it's the "Line visible" property in the inspector you want to turn off.

Can having this line turned off be set as a default?

A very good idea. It seems to me a bit of a bodge to 'hide' things by making them invisible, rather than simply not having them there in the first place. I suppose if it works it's not really a problem, but it can be a bit distracting; I like to see a score as it's going to be printed, rather than having lots of half visible markings all over the place.

Workaround (coarse);
Insert pedal;
Edit from Inspector;
Add to custom palette;
I attribute name then close and reopen MuseScore.
The line exists and can be edited with the usual double-click.
(Something here does not work well in the palette)

As mentioned, you can do so already - just set one up that way then add it to your palette. We could indeed consider having such a line already present in the palette in the factory defaults - also with the asterisk already present.

I vote yes for that.
I have attached a palette containing Ped----------* and Ped *.
I find that it still needs manual tweaking by horizontally shifting it 1 or 1.5 points.
