Stemlets (half stems) Over Rests
I would like to suggest including a possibility to extend beams over rests realized as "stemlets over rests."
This type of extending beams over rests is included in Lilypond, Finale and Sibelius. Here's an image from Lilypond beaming options, including stemlets:

Here's a brief description of stemlets from the Micrologus website:
"Traditional practice was to break beams for rests, but it is now common to include rests in beam groups. When a rest is included in the beam group, short stems, or stemlets, are usually added and extend from the beam partly toward the rest(s). The heights of beams often need adjustment when rests are included in a beamed group. This is especially useful when dealing with rhythmically complex music."
As a disclosure--I apologize for taking time asking about this if this option has already been included in MuseScore 2 and I haven't located it. In any case, I welcome suggestions!

The good news is that you already can. Go to the "beam properties" palette in the Palettes menu, and find the option labeled "bar middle" (it should be the second one). Either drag that onto the rest, or click the rest then double-click the symbol, and voilà! Beam over the rest. As for having a stem appear as well, simply use a second voice to add a note in that position, delete the other rests, and make the note both silent and invisible. The stem will remain, which you can adjust to fit properly. You can then decide whether to keep the rest visible or not.

That is a bit of a workaround.
