MuseScore uses General MIDI for sounds. I would suggest creating a voice staff and renaming it. Once you have created the score, you can play around with the available sounds using the Change and adjust sounds to find the one that sounds most like a Theremin. (Maybe voice, or maybe one from the "Synth" sections).
