1. open score with percussion
2. type some notes
3. change instrument to glockenspiel (or any pitched instrument)
4. try to add treble clef (nothing shows)
5. type note using keyboard
6. you get a crash
yeah, I can confirm at least up to step 4 I can't add treble clef. Somehow I types notes, but they don't show up and so don't produce a crash. I'm on arch linux mate x86-64.
I can reproduce constantly in one scenario right now. The key is you have to do a single click in the drum input palette (it's allows to the user to check the instrument sound perhaps?) before entering notes.
If after "N" at step #2, I enter notes directly with keyboard, there is no crash.
So:
1) New drumset score
2) "N" -> single click in the drum palette eg on the letter A (you hear the sound of Acoustic Snare)
3) Then, enter some notes with keyboard
4) Exit "N" -> Staff properties -> Change instrument -> Glockenspiel -> Ok
5) Drag and drop the treble clef in first measure (same result by double-clicking)
6) "N" -> enter a note
Well, I can reproduce also with another shorter sequence by double-clicking at step #2
1) New drumset score
2) "N" -> double-click in the drum palette eg on the letter A
3) Change instrument -> Glockenspiel -> Ok
4) Drag and drop the treble clef in first measure
5) "N" -> enter a note (eg type C)
Result: crash
EDIT: issue not specific to 2.1.
Ditto in 2.0.3, 2.0.2 etc.

No crash for me either. Please attach the specific score that crashes so we can investigate further.
The basic inability to change a staff from pitched to unpitched or vice versa is a known limitation; see also #97416: Toggle between clefs of unpitched percussion and pitched percussion leads to a crash.
