1) Add notes to a measure, all staves. Select a different volume (p, mp, mf, f, etc) for each stave. The notation is there, but on playback of a .mid file on a player piano, the volume is the same for all staves. Looking at the MIDI Editor, you can see that the absolute velocity is the same for all staves. This should be adjustable for each stave independently.

Dynamics are applied to an instrumet (all piano staves on one instrument) by default. To apply dynamic to a single staff, select the dynamic and open the ispector and set dynamic range to staff.
