Re-add "3" to Triplets
If I...
1. click on the "3" of a triplet,
2. in the Inspector, in the Tuplet-section, set NUMBER TYPE to NONE,
3. click somewhere in the score to loose my focus.
How can I then get back to that Tuplet-section in the Inspector to re-enable the "3"?
(Assuming I can't CTRL+Z because i closed Musescore in-between)

Select one of the notes, then in Inspector at the very bottom select Tuplet

By the way, is there some way to make Musescore automatically number all the triplets according to some convention? (Like only numbering the first Tuplet of every measure)

Not currently. Seems like a reasonably useful suggestion for the issue tracker, although also maybe something better suited to a plugin.
