That's Cmd+U if you're on a Mac
You could also Close the program and reopen it. At least on Win10 Windows doesn't allow restoring to fullscreen, so it'll be restored to it's previous windowed size instead.

It just says nothing selected on a blank grey screen

What you're responding seems entirely unrelated to what you're answering on. Switching between fullscreen and windowed mode has nothing to do with having anything else selected or not.

Hmm, sounds like you're describing the Inspector. Did you perhaps undock it then somehow maximize that, or at least make it as big as your monitor? Can you try simply resizing its window? If not, can you post a screenshot?
Also, if it is the Inspector, pressing F8 will close it. Then maybe Help / Revert to Factory Settings.

The toggle screen shows it ok but when I go into it just a grey screen shows. I did manage (somehow!) to get the navigator panels but can't get rid of them now. Have tried all the F keys with shift/cntrl/fn keys! Have uninstalled and reinstalled.

Solved it!!! I changed the scale and layout setting of my laptop to 75% then I could close the window which was blocking Musescore. Phew.

The screenshot btw shows that you're not in fullscreen (which is why exiting it didn't help) but had somehow resized the window to be larger than your screen.
Not sure if you figured it out but I had the same issue, googled it, found your thread. And then started playing around. I’m on a 13” Mac laptop. It seems if you hove the cursor up near the very top of the screen, the MuseScore menu appears. Click on View (one of the menu buttons), click on “Exit Full Screen” all the way at the bottom of the list of options. Let me know if that worked for you.
I just had this same exasperating problem. I didn't see the answer in the previous responses. I stumbled upon the solution in MS4 when I happened to move the cursor to the top left of the screen, and then the menu bar reappeared and I was able to see the View menu and "Exit Full Screen".
