How do I change the project key signature?
I started a new project, started to add some notes for an alto sax part, then saw that my project key signature was wrong. I needed to set the project to Bb in order for the alto sax part to be in G. But I just couldn’t figure out how to go back and change the project key signature.

I looked at that but what I couldn’t figure out is after I set the key signature in The New Score Dialog, but then I discovered I was wrong, how to I navigate back to change the key signature for the score? I gave up and created a new score.

You don't navigate back, you just change the key signature to what you want it to be. See this bit within the article that you read.
