See https://musescore.org/en/handbook/4/time-signatures
and in particular https://musescore.org/en/handbook/4/time-signatures#properties-beams
Select the time signature and go to the properties.
Click on the third, fourth, fifth and sixth note (1/8) to obtain this pattern.
You can also create a new (second) 7/8 time signature with these settings for further use. And think about what pattern you want for the shorter notes.

Thanks HildeK, that did exactly the trick.

"You can also create a new (second) 7/8 time signature with these settings for further use."
... but remember to add a meaningful description to the new time signature after adding it to your palette:
Right-click time signature in palette > Properties >Name
By default the new time signature will have a name of "7/8", so you could change the Name property to "7/8 beam2-2-3". Then you will get a popup hint to differentiate between the default 7/8 and your new 7/8 time signature. Otherwise the two time signatures are visually identical with an identical popup hint - hard to know which to choose!

Even if you don't, it's not a big problem. Either you've got the right one or you just take the other one. The beaming is adjusted automatically.
