Bowings
In the advanced setting, Articulations and Ornaments, I do not see up and down bowings. The down bow has a dot in it. Where are these items?

The two standard bowing actually are there in the palette. They're right in the middle of the group (just before the turns), so you could have missed them.
If you are still using the "Basic" workspace that shows by default, be sure to switch to the "Advanced" workspace using the control at the bottom of the palette window.

Is there a shortcut for bowing? I could not find any information about it on the handbook.

There is not one predefined, but it can be defined in edit->properties in the "Shorcuts" tab. The easiest way to find the is to search "bow"
