Bug Report #1: Vanishing Lyrics, Version 2.1.0 rev 871c8ce
Hello, I'm new here so please excuse if this has been posted before.
I've noticed a bug: Upon changing the height of a note by pressing the corresponding key, say, "A", the lyrics underneath the note are deleted.

Ciao Clara, welcome. Maybe because you have entered a new note and the lyric was 'anchored' to the pre-existing.
Click the note instead and use the up / down arrow

That is interesting, that it deletes old notes.
I know about the up and down arrows. They take me through a range, however. Say I want to change the note from A to C, then I have to go through A#, B, B# to reach the C. It would be much more user-friendly if I could merely press C!
Is it possible to anchor lyrics to something else instead of a note?

No. You can use staff text to attach something to a rest.
You're overwriting the note (chord even) with an entirely new note, which might very well even have a different duration. The old note and what is attached to it (such as lyrics/articulations/ties) is first removed and then the new note is inserted.
Either use the arrow case as Shoichi suggest; or use the Re-pitch mode, which indeed will only change the pitch of the existing note. (see also https://musescore.org/en/handbook/note-input#input-modes)

Repitch adds another note on top of the old one instead of changing the old one's pitch.

The button selected in this picture only changes the pitch.

Have a look at the link or mike's screenshot to make sure you are actually in re-pitch mode. The whole purpose of that mode is that it doesn't add/remove anything and only changes the pitch (it even skips rests and ignores duration settings!)
