How to change default beaming for standard time signatures?
I prefer eighth notes only beamed in groups of two rather than groups of four when I'm writing in 4/4 time. Is there a way to change the default beaming so I don't have to go into time signature properties to change it every time I used the time signature?

There are two options. For a single staff right click the time signature and edit the beaming. For all instruments use the master palette and make a time signature that looks the same, but has the different beaming. See https://musescore.org/en/handbook/3/time-signatures#time-sig-properties

Not sure this is the best place to ask, but it's kind of along these lines above:
I'm working on a piece in 6/8 and it naturally groups notes into three beats per measure (three quarter notes per measure) and I'm trying to get it to change to two dotted-quarter notes as if it will be conducted in two beats per measure.
Especially for it to auto group rests into a dotted-quarters instead of a quarter rest followed by an eighth rest.
I tried the steps above but hasn't solved this.
Is there a way to do that?

The rests are hard-coded and you can't change the results. The instructions I gave above work for the beaming.

There is a "Fix" reported for 3.5 here: #4867: Rests in measures should be grouped according to time signature. I haven't yet investigated exactly what the change has done. I think it ensures we get 1/4 + 1/8 grouping in 6/8, 9/8 etc, rather than 1/8 + 1/4 which was the previous default. I don't think it gives the user full control over the grouping as requested here: #294419: Allow modification of default for filling measures with rests, but it is an improvement on a default that was just wrong.
