Guitars are having audio leveling issues
I'm tabbing out Blackbird by Alter Bridge and right into the distortion guitars, before the first chorus, the two guitars keep getting randomly quieter and louder. I'm not sure why.

My first guess would be it's related to the version of MuseScore you are using. The latest release is 3.3 and you still use 3.0.5. If this proves to be incorrect, then I would look at the soundfont you use. I didn't notice drastic changes in volume when I played is in version 3.3 using my default soundfont.

Surprisingly, this was it. There weren't any settings on them telling them to do anything but change whether or not the guitar was muting, but they were still affecting the volume.

They switch to different sounds, and those seem to not toI have their volume balanced well

How do I properly mix them then? In the mixer they say they're all at the same volume.

It is not leveled out properly in the soundfont, not much you can do about it

I believe this is indicative of the volume drop you would get playing a real guitar using these techniques (but I don't play the guitar). You can adjust individual sound volumes so there is less of a change in volumes.
