Instruments names.
What can I do to put the instruments names in other language, not in english? If I want write "Flauta" in spanish instead of "Flute". Is there a way to do this?

In a score or in the selection? The latter would IMHO be done in %ProgramFiles%\MuseScore\Templates\Instruments.xml (Windows), in the former by right-click on the stave, then stave proverties.

right-click on a selected measure in the stave

I think MuseScore should do that automagically, when being switched to another language.
Also the translation if far from complete. Where would I need to send updates to?

There is already a more translated spanish file here
You can attach your update to a post in the translation forum.
Unfortunatly there is currently 2 differents sources for instruments.xml. One in the 1.0 branch and one in the trunk. If you want your next update to be available in MuseScore 1.X, you can use this file as a reference. For the trunk and MuseScore 2.X, use this file instead.
Translating instruments.xml is not easy right now. I plan to work on a way to integrate the translation with the translation server http://translate.musescore.org
