See the original reply to your (same) question in http://musescore.org/en/node/10997. Basically, you can't switch individual notes, only entire voices.
The ability to move a group of notes into another voice already does exist - see Edit->Voices. But it only works for whole measures at a time. Doing so for individual notes would be *much* more complicated. See this thread for some of the issues that surround this:

But, is there a way to change what voice a note is in once it is made?

no, not in 1.0. You have to delete the note, change voices and enter it again.
Maybe if someone made this a feature request for the new version being developed, it might happen.

You can't do it for a single note, but you can d it for a whole measure, using the command mentioned in the other thread.

I think the ability to move a note or a group of selected voice to a different voice is important.
If you capture something into the wrong voice, you need to move it later.
If you decide, that you want to add a melody or something else later, you will need to push part of you you have in the bar into a different voice.
I don't want to mention that this is a standard feature in Encore.
So, is it OK to log a feature request? I logged one before and was told off. So now I'm discussing it, before logging a request.
