I'm trying to have (for example) a minim in the bass with a crotchet playing in the following crotchet beat but the whole song just gets moved forward. How do I allow bass notes to ring underneath the melody? I'm sure it's probably really simple but I'm more of a pen and paper person usually!

If you're a more visual learner, you might want to invest a little bit of your time into watching the introduction/training videos. They do a good job of walking you through the basic operations imo.
You can find them at the bottom left of the homepage: https://musescore.org/en

How about if I want 4+ ringing notes at once in an arpeggio (all notes overlapping)? This seems a very complicated way of going about things, does the pro version offer more voices or a simpler way of inputting this kind of thing?

First of all: the MuseScore dektop music notation software does *not* have a pro version. It is entirely free and open source!

As for arpeggiated chords; either enter a normal chord and an arpeggio (you can add more notes to a chord holding Shift while inputting). Or for slow build-ups, you can use the tie feature. The example below (score attached as well) only uses voice 1 on staff 1 to input this:

To achieve this result, first enter the buildup as normal notes and add the final chord as a normal chord. Then select the notes of the buildup and press the tie button.

FWIW, using cvoices is very somple and natural for the specific things they are intended for, which is music that actually incldues multiple voices. Merely tying notes for an arpeggio is really something very different, and as shown above, is best done a different way entirely.

If you have further issues, feel free to psot the score you are having problems with and explain what you are trying to do.
