Is there a way to gradually slow down the playing of a score at some point?
Does "ritard" work? If so, does it have to be entered for each instrument? I can see how that would be tricky for the synthesizer - how much slower, at what rate.

If you don't specify a tempo for a score, what is the default?

120 quarters per minute
♩= 120
The “hack” that MuseScore uses to handle these directives (invisible discrete tempo changes) is an approximation of the actual performance: good enough for scoring purposes but only an approximation.
If you move the MIDI-file to a DAW program for final finishing, you will find there that you can control the tempo by creating a line or a curve from one tempo to the other. You should make a note to yourself to review these sections of the exported file.
