Do you mean you already have a score written in concert pitch and you want to transpose it? Right click the staff, change Instrument, type "euph" into the search box, select the Bb version. You'll likely also want to change the clef to treble as well. If you mean you are just starting a score, then select this same instrument when you are asked.
Right-click on a measure, choose Stave Properties and change the instrument to Euphonium (treble clef) - you can find it by making sure that "All Instruments" is selected. Info for those not in the know - Euphonium as an orchestral instrument is usually written for in C and with a bass clef; Euphonium for brass band is usually written for a Bb transposing instrument and is in treble clef (strictly speaking you are transposing octaves as well).
