What is the fastest BPM that you can do? And can you change the color of the paper?

There is no specific upper limit on the tempo you can enter into MuseScore, if that's your question. Of course, whether the result is actually playable is another matter. But a tempo of 400 BPM is trivially easy if playing mostly whole notes; much more challenging if mostly eighths :-)
Not sure if there is a way to have musescore.com render scores with a different background color. You can experiment with attaching images to you score, but probably they will obscure some score content.

I haven't used the feature, but what about a wall paper or color under Edit|Preferences->Canvas?

That will not change the color of the paper for MuseScore.Com or for print, just the color of the paper in MuseScore.
You probably want to use colored paper, unless you've come into an inheritance (and still use an ink-jet printer, poor thing ...) and don't mind paying for colored ink.
