Stemless notes
I would be nice to be able to create stemless notes, for things like chant. The only way that this is possible to my knowledge, is to set invisible every single stem of the notes. While this displays correctly, it is very tedious and time consuming. I searched this website, and found nothing about how to do that.

I don't know that this method is fully supported (which means it may change in future versions), but here are instructions for current versions of MuseScore:

Yes, that's why I said it is unsupported. It can also be used for stemless slash notation for chords (see new features for 0.9.4 , "Notation" heading). At the moment "slash notation" takes two steps.

Maybe we can rename the feature to "remove stems" or stemless in the measure properties dialog box ?

Is there a way to write small notes also? I know of the option to turn a regular note to a small one, but again, this has to be done for each note individually. It would be great if there were a way to switch between entering normal and small notes.
