Mute/Pizzicato sounds?

How do you get playback to use a muted brass instrument or a pizzicato stringed instrument when necessary? Because as I understand it the default is just the regular open/bowed sounds. However, these alternate sounds show up on the mixer page, so I assume there should be a way to use them?
