Triplet Feel
How do you change the beat description? I'm writing a piece in
triplets but I need to write it in eighth notes. How do I do that? Where 2
eighth note are played as the first and last triplet.

'swing time' is what you want

Or, if you mean that you have a compound time (6/8, 12/8) etc. and want 2 notes in the space of 3 then the way to do this is to create a dotted crotchet note or rest, click on it and press [Ctrl]2 to create a "doublet".
I'm still not quite sure what you mean by ... “I am writing it in triplets, but I need to write it in eighth notes.”
Intuitively, it seems to me that you are saying that “what the performer actually does” is different from “what the score (strictly) says.”
... which (most probably) is ... “swing.™”
Therefore, my immediate suggestion is: “turn-on Swing, and then see how close it comes to what you have in mind.” (If you’re lucky ...)
