Some basic things I need help with
How do you display the volume/tempo controler?
Also how do you show only one or two voices? I don't want to hide the other instruments and make the partiture empty, I only want the instruments I choosed to be displayed for me.

I don't understand that question, you don't want to hide seomething but not see it anyway?
Maybe you mean extracting parts ?

For tempo, it's good practise to put tempo markings at the start of the score and when you want the tempo to change. It will help the performers. See Tempo .
Same for volume. See dynamics
To add to lasconic's comment about volume and tempo: I wouldn't of that dialog as the way to control these. Think of it as the way to *overrirde* the markings you have put in the score. Always start by putting the markings you want in the score, so they will affect playback in all cases, and so human musicians can read them. Then, in the (presumably rare) rare cases where you want to temporarily override these, then you can use the Play Panel dialog to do that
And to add to Jo-Jo's Comment about staves: MuseScore does jot have a way to temporarily hide certain staves. But depending on whst it is you are trying to do, you probably wouldn't want that anynow. More likely, you want to extract parts to *permanently* make a part for just a single instrument at a time fro your score. MuseScore does that via File->Parts.
