Is there a simple way of writing choral music on two staves, i.e. stave 1: S/A; stave 2: T/B?

Look up "Voices" in the Handbook. Create two staves. Write 2 voices in each stave. I think this is what you want?
Not really. I knew I could do that anyway, but I was looking for an easier way.

How else would you think you could have 4 notes in 2 staves at the same time?

It's not a matter of fitting notes in, it's a matter of labelling.
If I want to write choral music on four staves, the initial setup will be: add soprano; add alto; add tenor; add bass.
I just thought there ought to be a way of doing it as: add soprano & alto; add tenor & bass.
What I normally do in fact is to start with just soprano and bass, then alter the labelling as above - I was just wondering if there was a way I could save myself the bother.

Ok. Then there is a way. You can create a score once, set the style you want, instrument names as you want and then save it in the template folder of MuseScore. Next time, choose Create from template in the new score wizard and you are done.
