Yes, by selecting different instruments, either directly for the score or in the mixer
To be clear, normally you'd do this when you create the score - whatever instrumenta you choose in the Create New score wizard, those should be the sounds you get.
Well that's very good.
I was about to dismiss Musescore for just one playback-sound,
but then I was wrong.
So, it's no option to change sound for a set staff?
It would be handy, thinking a SATB arrangement and needing to distinguish eg. bass from tenor.
But anyway, looking good.

Of course a single Instrument soundfont won't enable you to setup different sounds for different staves.

If you mean, you wish put bass and tenor on the same staff but with different sounds, that is not currently supported. You'd have to convert your arrangement to open score (one staff per part) to get that sort of playback. That's not hard to do either, see for example:

You could have the main version of your score for printing and then a converted version you create when done for rehearsal purpose or whatever.

That's an ok workflow. I believe I'll use one staff per part mainly.
