Adding Notes One Octave Above or Below
I have found through other posts that Shift + 8 and Alt + 8 can be used to add notes one octave above or below an existing note.
I find with my Mac that Option + 8 adds a note one octave above an existing note, but Shift + 8 does not result in any changes to the existing note.
Could someone please list the recommended Mac keyboard combinations for adding a note one octave above and one octave below an existing note?

There is no default shortcut for adding notes below currently (there was once, but it created conflicts on non-QWERTY keyboard layouts). You can either customize your shortcuts via Edit / Preferences to add a shortcut for this command, or you could simply press Cmd+Down to transpsoe the existing passage down, then use Option+8 to add new notes an octave above (back where it started).

For my system, I have assigned Shift+8 to the unassigned shortcut to give me the needed capability.
