How to restock positions in last chord?

If by restock you mean change the string a note is played on, then in the tab, click the note and press ctrl-up arrow to move it up a string (the others will move if it is possible to move your selected note and all others affected). ctrl-down arrow will move the note down a string.

Have you tried checking the human performance box?
I don't play guitar or use midi a lot, if this doesn't work, I'm sure someone will help in the next couple of days. There are fewer participants here on weekends.
