Hi hat

Press Z for the master palette and search for "hat" and "sizzle"

Closed hi hat is an ordinary note within the standard drumset. Seventh note from left in the drum window (shortcut G) is stick on closed hi hat, ninth (shortcut F) is pedal. "Sizzle" isn't a standard drumset note, but presumably you want some sort of marking over a standard note to indicate this, and the Symbols palette as mentioned above is indeed a way to find such marking (you might look first under Articulations, though).
