adding eighth rests
Maybe I'm just blind, but I can't seem to figure out how to insert an eighth rest between two notes. Or any length of rest for that matter. Is this possible??

Note entry in MuseScore works by replacing ore splitting existing notes or rests. There is not function (yes) to insert a note/rest.
If your first note is a quarter you can replace it by an eight which will result in an eight rest between first and second note.
The handbook has answers. See note entry .
If you go control/command Z on your keyboard it brings up a master pallete then in the search box type quaver (or whatever note/rest you need) then drag it onto the stave.

And your answer was wrong even back then. this would only visually add a rest, but not in playback, and the measure would now also look incorrect, as it seems to have a quaver too much
