You need to select the entire staff you want to listen to only some of the voices. You then need to open the Inspector using F8 and the Filter Selector using F6. In the filter selector, remove the checks from the voices you want to hear. Then, in the inspector, click the button that says Notes and remove the check from Play. This will silence those voices that are selected. To restore all voices to play, select the staff again, make sure all of the voices are selected in the filter selector and in the inspector click the arrow to the right of Play that should be black. This will make all of the voices play again. I advise that you restore all voices to play before changing only some of the voices to play each time. This will make it easier to keep track of which voices are playing.
