How do I beam two eighth notes together that are on separate beats? I have an eighth note of the "and" of beat 1 and on the down of beat 2.

But do note, this is not normally considered correct notation. There can be some special exceptions in which it could be considered permissible, so if you know for sure you are dealing with one of those situations, by all means, use the beam properties palette. But don't do it without really good reason - as I said, it is normally considered incorrect. The default beaming in MsueScore should be correct most of the time. One of the few exceptions is the case of three eighth notes followed by an eighth rest starting on beat 1 (or beat 3 in 4/4, etc), where MuseScore will beam them all together even though the normal rules suggest breaking this up to avoid the appearance of a triplet.
