won't arco?
I put the first violin, cello and viola in pizzicato at the beginning of the score, but had them start playing arco around five measures in. However, when I played back the sound, no instruments that were in pizzicato started playing arco, they continued playing pizz for the entire duration of the piece. Is there any way to fix this?

It is the template didn't play along with the arco text in the text palette.

if nothing is fixing it, you'd need to share the score, so we can take a look
Same issue here with 3.2.3. The problem appears to be that the default "arco" text's playback effect is defined wrong, so that it doesn't affect any of the four voices (unlike the default "pizz." text, which does). How do I change the default behavior so I don't have to edit this every time?

At some point the channel name was changed from Normal to Arco. In the palettes and instrument definitions in 3.2.3 the arco text and instrument definitions agree on this. If you have a score based on an earlier 3.x template, the names will not agree. To fix this in an existing score, right click the violin staff and choose staff/part properties. Click the change instruments button and select the violin again. You may want to fix the long and short names for the instrument when you do this.
