How do I change the number of bars etc. I have Muse score 3 and if I use f4 I get a new score sheet.

Use the Add->Bars (Measures in the US) menu for various ways to add bars if you need them. There are shortcuts listed on each item to show what to press if you don't want to use the menus. To delete measures, select a (some) measure(s) and press ctrl+del to remove a measure rather than only clearing it (them).
