There is no string data on the violin that you add from the instruments dialog, but there are on the violin added when you use either the symphonic orchestra or string quartet templates. If you right click the staff, choose staff/part properties, you will see the string data button at the bottom of the dialog box. You can add the strings. Since it's unusual to use tablature with a violin, this is normally not even necessary. Add a note to the beginning of the score explaining the special instrument you are composing for.
The bow up and bow down glyphs are in the articulations palette in the advanced workspace and you can assign a shortcut to them in Preferences if you want to.
