Changing stave space size doesn't scale line text
If I alter the stave space size from page settings, none of the lines with text scale accordingly. Instead I have to change the font size for each manually. Somehow that doesn't seem right, when other elements do scale automatically.

WHat version of MuseScore? Seems to work fine for me in both 3.0.5 and 3.1. I fixed a bunch of things relating to scaling for 3.1, but this already worked correctly. Or maybe I'm miusunderstanding. If you continue to have problems with a current version, please attach your score so we can understand and assist better.

3.0.5, but seem my reply to the next comment.

It would be worth checking under Format > Style... > Text Styles, to verify the setting of the checkbox "Size changes with stave space setting".
By default, this checkbox should be on for Text Styles like Lyrics, Expression, Tempo, System, Stave, Rehearsal mark, Instrument change etc. But by default, this checkbox is off for Header, Footer and Instrument name (part).

That's it! Well done, thank you. Now I think about this more carefully. I had taken a score template from ms 2.1 then applied the content. Presumably this is another gotcha when migrating from one version of ms to another.
Thanks

Hmm, that still shouldn't be the case - by default that option should be checked for both versions. I just did a quick check creating a template in 2.1 and using it in 3.0.5, it worked as expected for me. So your 2.1 score must have been customized oddly. Well, that or it was a bug in 2.1 that was fixed between then and 2.3.2, and in any case, you'd presumably see the same behavior in 2.1 if you tried reducing the scaling ther.

I think early on in this process I came from 2.0 and developed styles from there, which were carried over to 2.1 - maybe something was set wrong there. But I did notice this on 3.0.5: the font size depends on whether the first note of a bar is selected before clicking on 2nd time bar line compared with selecting the whole bar. If I do the latter then the font is not proportional to the stave size - it's much bigger.

Yes, this is true, another known issue already fixed for 3.1:-). See #285923: Lines from palette added by double-click with range selection ignore score style settings

Good to know. I can live with this in 3.0.5 for the time being, unless 3.1 is baked and is worth upgrading to now.

It's still in the oven but available for tasting :-). You can install the 3.1 beta alongside 3.0.5 (on Windows, just be sure to select a different install folder). In general, it fixes a lot of issues, plus adds some oft-requested new features like single note dynamics and a paste half/double duration facility. I expect plenty more fixes will be included before the official release.
The whole point of a beta is to get feedback on how things are working, so if you value bug-free software, it's definitely in your interest to check it out and report any problems you find. Whether you then also decide to start using it regularly is up to you and your own experience with it.
