"Open" text does not work for trumpets in jazz combo/big band templates

I recall we had an issue with channels not being named as they needed to be for pizz / arco in the templates, I think this is more of the same

1) create score based on jazz combo or big band template
2) add notes to trumpet
3) add "mute" text to first note
4) add "open" text to a later note
5) play

Result: it stays muted. I think it's because the channel isn't explicitly named in the template and defaults to "normal" rather than "open".

It's not hugely critical, but it is a regression, and should be an easy and safe fix.
