Whenever I open musescore, the getting started window never shows up and I can't select anything until I mash a bunch of keys. And even after that, if I try and change an instrument, that menu won't show up either, and I can't interact with anything until I press "I" again.

Sounds like the menus are opening offscreen, like if you accidentally moved them off, or you had a different display connected at one time, or changed resolutions. Easiest solution is Help / Revert to Factory Settings. If you have other customizations you wouldn't want to lose (shortcuts, etc), you can instead download, install, and run the plugin to reset window positions (see Download menu above).

In the future, it's better to use the Support forum when asking for help with MuseScore.
