Schenkerian analysis
I am about to create a Schenkerian analysis and have two signifiicant questions:

How do I create an open stave - that is with no bars, time signatures etc.?

How do I colour specific notes that I need to highlight?

colour specific notes right click->Select->more->same pitch->Inspector, set the colour
Right click the staff and choose Staff/part properties. You will see options to not show all of these things. As long as the measure breaks do not prevent you from putting a note of a certain duration where you want it, this will suffice. If there is a barline (which would be invisible) in the way, you can insert a longer note using ctrl+shift+letter. This will insert a note of that duration and mark the measure as irregular. These irregular measure marks do not print and can be turned off in the view menu. If you don't want the extra rest after the note in that measure, select the rest and press ctrl+shift+delete.
If you mean you want a notehead's color changed. Look at it in the inspector (F8) and click the color rectangle. See also https://musescore.org/en/project/colornotestpc for another possibility.
