I don't understand. Can you post the specific score you are having problems with, and precise steps to reproduce the problem? The option works fine in all cases I have tried.
Here's a trivial sample score. I just added three instruments (violin, uke, uke tab) and then hid two. I made sure I had "Hide instrument name if there is only 1 instrument" option checked, and I still see "Violin" and "Vn." in the score, even in the display at this URL: https://musescore.com/user/6353701/scores/1531511
The only workaround I know is to change the instrument names to be "".
Well, that is an entirely different issue. This score does have 3 instruments.
The original issue way that the name wrongly apeared for score with 1 instruments that has more than one staff.
Please open a new issue for the current problem.

This still doesn't appear to work if there are multiple instruments but only one is not hidden.
