I am trying to input triplets with eight notes, each time I pick triplets, it automatically changes to sixteenth note triplets? Why?

Because in MuseScore you always start from the combined length of what you wish to divide into a tuplet: https://musescore.org/en/handbook/3/tuplets
So for a triplet consisting of 1/8th notes, the total length equals 1/4th and that is the duration to start subdividing from.
