How do I delete an entire staff?
I have a four-staff sheet for four instruments and I want to get it down to 2 instruments - how do we delete an entire staff? Thanks

I don't get the opportunity to click "remove" but I can check the one I want to keep and then click "ok" and the other staffs are deleted from view on the page. However on playback I can still hear them. How do I silence just those? Thanks!

First select The Instrument (on right column) https://musescore.org/en/handbook/create-new-score#delete-instrument.
Via Mixer (F10) https://musescore.org/en/handbook/mixer

You need to select one instrument (of staff, if the instrument has more than one) first. What you seems to have done is to make them invisible instead.
Mixer would at best mute them, not delete
