So far the only way to set chords symbols playback settings is to iuse the Inspector, and to have this applied to all chord symbols to in the inspector use set 'set as style' button.
These settings should be available in Format > Style > Chord symbols too

Since it is possible to set each playback property (Interpretation, Voicing, Duration) independently in "Edit Style", there should be a "Set as style" button for each similar property in the Inspector as well.
Not sure extending the request is a good idea, once a PR for the original request already exists (and does not contain that extension).

This duplication / inconsistency is part of why I'm hoping to see MuseScore 4 find a way to avoid the use of completely separate interface elements for things like this.
