The sound by Mixer (F10);
The Instrument: press i, add the instrument then copy&paste

Well, that would add or remove instruments, not change the existing ones. OK, with copy/paste and then remove this works too, but is way more complicated than needed
right-click into the staff (or staves), staff/instrument properties, change instrument
