I am missing the ability to enter certain entites from the keyboard, such as:
- Fermata
- f/p, perhaps certain others of the most common ones,
- a general way to add a cautionary accidental (i.e. "Toggle cautionary", as opposed to "add flat/natural/sharp")
- Full bar rest

See #273051: Keyboard shortcuts for palette objects and also #12496: Single-click courtesy accidentals. We're slowly working towards ability to access all commands directly by keyboard. Meanwhile, you can use the palette search facility (Ctrl+F9) to search for elements by name and use Enter to apply, which is at least a step in that direction.
Note there is already a shortcut for full bar rest - Ctrl+Shift+Delete

I just want a shortcut to add 𝆑 (forte - arguably the most common dynamic), but it took a while to figure out how to do with Ctrl+9 (my way - type "dy", hit down arrow 4 times, then f, then enter), or am I missing something?

One suggestion. It is relatively often practice to add the key shortcuts in so-called tool tips (pop-ups that appear when you position the mouse pointer over icons).
For instance, when you find "slur" using the palette search facility and then position the mouse pointer over the slur icon, the tool tip should be "Slur (s)" (instead of just "Slur") so that you can learn that by pressing "s" key you can execute the slur command.
It works! If you own keyboard maestro, give it a try. The trick I found is to use shift-F9 to open the palettes window and then use a number of down-arrow presses to get the palette you want in front of you, then use precise measurement to get keyboard maestro to click on the right thing.
