On a previous verious of Musescore (? 3.0 or earlier). I had a shortcut for entering rhythms, that worked as expected (I use {ctl} + numberpad far left keys to change the note entry method ). Somewhere in the updates that shortcut was lost and is now longer in the preferences choices. I would like to have it back. See attached screen shot.

I'm not aware of any changes there, so setting those up should still be possible
Shortcuts are defined in Edit / Preferences / Shortcuts, entering "rhythm" into the search box will turn up the command.
In the future, please use the Support forum when asking for help on using MsueScore.

Sorry, I do know that Edit / Preferences / Shortcuts but entering "Rhythm" does not turn up the command (although it used to) so I thought it was a bug.
Search for "duration" instead (or some part of the tooltip shown for that mode)
This seems fixed for 3.5, maybe via https://musescore.org/en/node/305130 and https://github.com/musescore/MuseScore/pull/6063
