To replace it with a rest - thus keeping other notes on the same beats - simply press Delete.
To delete the entire beat from the measure - thus leaving the measure with fewer beats than the time signature says (not common, but occasionally useful) - use Ctrl+Delete.
To replace that note with whatever comes afterwards - moving some unspecified number of subsequent notes earlier in time - select those notes so MuseScore doesn't need to guess, then use Ctrl+X to cut and Ctrl+V to paste to the new location.

Simply select a note with left-click and press delete key. This works with almost every other element you put on the score.
There must be another one way (try right-clicking a note?), but I mostly press delete key.
