After opening a soundfont through Musescore 3, it asked if I would like to install the soundfont, which I did. it said it was successfully installed, and to select and view them through the synthesizer and mixer. However, neither of those actually show the newly installed soundfont, just the default general one. I double checked the soundfont folder and the file is there, but I can't actually load them.

Click the add button and see if it gives you the option of adding the sound font.
I have the same problem. No SoundFont - although the files are there in the folder Musescore3/soundfonts - other than the standard MuseScore 3_General.sf3 is listed in the Synthesizer Menu.
There are two sound folders like most other data folders in MuseScore. The one as a subdirectory to the program and the one for user data. To see a sound font in the Add button dialog is must be in the user's folder. To find the path to it, open Edit->Preferences, click the General tab and look at the folder listed next to Soundfont: you must put user added sound fonts there or they will not be listed by MuseScore.

OK I know this is a three-year-old thread but just in case... what "add button"?
EDIT: Found it, it's in the Synthesizer dialogue. Thanks!
